Roasted Beets w/ Goat Cheese and Rainbow Sprinkle Microgreens

This beet salad is nutritious and so so fresh! We love serving this up for taste testing during the hot summer months.

Roasted Beets w/ Goat Cheese and Rainbow Sprinkle Microgreens

Total Time: 50 min
Ingredients:
Beets
Olive Oil
Salt and Pepper to taste
Thyme
Balsamic Vinegar
Crumbled Goat Cheese
Microgreens Rainbow Sprinkle Mix
Directions:
Prep: Pre-heat oven to 400 degrees.
Trim, peel and cut beets into medium-sized chunks
Combine: In a medium bowl, combine beets, olive oil, salt, pepper, thyme
Place them on a cookie sheet and roast in oven until tender, turning once or twice with a spatula.
Cook time: approximately 35 to 40 min.
Gently toss beets with balsamic vinegar, crumbled goat cheese, and top with Hardee Greens Rainbow Sprinkle Microgreens
Serve warm or cold.
