Roasted Beets w/ Goat Cheese and Rainbow Sprinkle Microgreens

This beet salad is nutritious and so so fresh! We love serving this up for taste testing during the hot summer months.

Roasted Beets w/ Goat Cheese and Rainbow Sprinkle Microgreens

Serves: 8

Prep Time: 10 min

Cook Time: 40 min

Total Time: 50 min

Ingredients:

  • Beets

  • Olive Oil

  • Salt and Pepper to taste

  • Thyme

  • Balsamic Vinegar

  • Crumbled Goat Cheese

  • Microgreens Rainbow Sprinkle Mix

Directions:

  1. Prep: Pre-heat oven to 400 degrees.

  2. Trim, peel and cut beets into medium-sized chunks

  3. Combine: In a medium bowl, combine beets, olive oil, salt, pepper, thyme

  4. Place them on a cookie sheet and roast in oven until tender, turning once or twice with a spatula.

  5. Cook time: approximately 35 to 40 min.

  6. Gently toss beets with balsamic vinegar, crumbled goat cheese, and top with Hardee Greens Rainbow Sprinkle Microgreens

  7. Serve warm or cold.

  8. Enjoy!
