Garlic Chicken & Fresh Herbs Recipe

Serves: 6

Ingredients:

  • 6 boneless skinless chicken thighs breasts (about 1-1/2 lbs.)

  • 1 cup chicken stock

  • 2 tbsp brandy (optional)

  • 1 tbsp extra virgin olive oil

  • 1/2 tsp salt

  • 1/4 tsp pepper

  • 10 cloves of garlic, peeled and halved

  • 1 tsp minced fresh rosemary, crushed

  • 1/2 tsp minced fresh thyme

  • 1 tbsp minced fresh chives

Directions:

  1. Sprinkle chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Brown chicken on both sides. Remove from pan.

  2. Remove skillet from the heat; add the halved garlic cloves and brandy. Return to the heat; cook and stir over medium heat for 1-2 minutes or until the liquid is almost evaporated.

  3. Stir in stock, rosemary, and thyme; return chicken to pan. Bring to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes or until internal temperature reaches170 degrees.

  4. Sprinkle with chives.

  5. Serve and enjoy!
