Garlic Chicken & Fresh Herbs Recipe
Serves: 6
Ingredients:
6 boneless skinless chicken thighs breasts (about 1-1/2 lbs.)
1 cup chicken stock
2 tbsp brandy (optional)
1 tbsp extra virgin olive oil
1/2 tsp salt
1/4 tsp pepper
10 cloves of garlic, peeled and halved
1 tsp minced fresh rosemary, crushed
1/2 tsp minced fresh thyme
1 tbsp minced fresh chives
Directions:
Sprinkle chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Brown chicken on both sides. Remove from pan.
Remove skillet from the heat; add the halved garlic cloves and brandy. Return to the heat; cook and stir over medium heat for 1-2 minutes or until the liquid is almost evaporated.
Stir in stock, rosemary, and thyme; return chicken to pan. Bring to a boil. Reduce heat; simmer, uncovered, for 6-8 minutes or until internal temperature reaches170 degrees.
Sprinkle with chives.
